December is one of our busiest—and most magical—months of the year. It's a time filled with creativity, nostalgia, and the joy of crafting the 2025 Christmas Cheesecake Menu. Today, I’m taking you behind the scenes to show you exactly how these festive flavours come to life and the premium ingredients that make them so special.
The Chocolate Icons
Terry's Chocolate Orange (The Grown-Up Version)
This isn't just a chocolate cheesecake; it’s a festive icon and one. Of our best-selling Christmas chocolate cheesecakes. For the baked version, I use real Terry's Chocolate Orange segments on the top, but I take it a step further by adding a splash of Cointreau to really elevate that zesty orange flavour, giving it a luxurious, warming finish. It sits on a buttery biscuit base and is finished, of course, with a signature segment on top. (I have also made customers a White Chocolate Orange version before for those who prefer a creamier, lighter sweetness!)
After Eight Mint
Perfect for lovers of After Eight desserts and refreshing mint chocolate treats. If you love a dinner party classic, this is for you. I start with a digestive biscuit base and create a rich chocolate filling using a blend of dark chocolate and peppermint essence. But the secret? I add in a real After Eight on the top, so you get that satisfying snap and smooth mint fondant in every bite.
Luxury Hazelnut (Ferrero Style)
This is a texture sensation. I use a digestive base, but here is the twist: I hide a layer of hazelnut biscuits right at the bottom for an extra crunch. The creamy cheesecake filling is swirled with a Nutella-style paste and packed with chopped hazelnuts, then topped with crushed chocolate hazelnut pieces. It is nutty, creamy, and totally decadent.
The Festive Classics
The Ultimate Mince Pie
For this one I wanted to capture the essence of a traditional mince pie but give it the Sally style flair. I use a vanilla cheesecake base infused with a warming mixed spice. The star of the show is the mincemeat—I only use the luxury brandy-infused mincemeat for that deep, rich flavour. I place a generous dollop of mincemeat right at the bottom on the digestive base, so you get that fruity surprise beneath the creamy filling.
Baileys & Oreo
We couldn't do Christmas without these two! Our Baileys cheesecake is smooth, boozy, and creamy, while our Oreo features a classic Cookies & Cream base that is a hit with the whole family.
The Showstopper: Pigs in Blankets
Yes… it exists, and yes… it’s legendary.
I love pushing the boundaries of what a cheesecake can be, and this savoury creation is the talk of the town.
This is a true labour of love. I start by grilling streaky bacon and wrapping it around the edge of the cheesecake (just like the real thing!). The filling is a savoury cheese blend packed with chopped sausage, garlic, salt, and pepper. To lift the flavours, I add fresh parsley and thyme.
It is finished with a layer of cranberry sauce on top to provide that perfect sweet-and-salty balance. It is the perfect centrepiece for a Boxing Day buffet!

I have some good news! Because you all loved it so much, I have decided to extend our Toffee Apple Crumble flavour! It will remain as our Flavour of the Month throughout November, bridging the gap perfectly between Autumn and Christmas.
