A Tropical Twist on My Signature Baked Cheesecake

Every cheesecake I make starts with the same philosophy – use quality ingredients, take your time and never compromise on flavour.

For this new creation, I kept my signature baked vanilla cheesecake filling, made with:

• Full-fat cream cheese 

• Fresh eggs 

• Sugar 

• Vanilla essence 

It all sits on my buttery biscuit base before the fun begins.

I make my own smooth mango coulis by blending frozen mango into a silky purée. Half of the cheesecake filling is poured over the biscuit base before the mango coulis is gently swirled through to create ribbons of tropical flavour.

I then add fresh passion fruit before covering everything with the remaining cheesecake filling. Before baking, the top is decorated with more mango coulis in a feathered pattern, and once baked and cooled, it's finished with another spoonful of fresh passion fruit in the centre.

Not only does it taste delicious, but I think it's one of my prettiest cheesecakes yet!

Why Mango and Passion Fruit?

For me, summer is all about fresh, vibrant flavours.

Mango brings a naturally sweet, smooth taste, while passion fruit adds a gentle tang that stops it from becoming too sweet. Together, they create a beautifully balanced cheesecake that's creamy, fruity and wonderfully refreshing.

It's the sort of dessert that's perfect after a summer barbecue, for a family gathering in the garden or simply as a little weekend treat with a nice cold drink or a cocktail if your really wanting to get in the summer swing of it.

Handmade from Start to Finish

One thing that will never change is how I make my cheesecakes.

Every cheesecake is handmade in Stoke-on-Trent, using the same care and attention that I've always believed makes the biggest difference. I don't cut corners, I don't rush the process and I only make cheesecakes that I'd be proud to serve to my own family and friends.

From preparing the biscuit base to swirling the mango by hand and decorating each cheesecake individually, every bake is made with love.

I recently took my Mango & Passion Fruit Baked Cheesecake along to a couple of local events, and I was so pleased by the response.

Seeing people try a new flavour for the first time is one of my favourite parts of what I do. Watching their faces light up after that first bite reminds me exactly why I love creating new cheesecakes.

It's always a little nerve-racking introducing something new, but hearing customers tell me how fresh, light and summery it tastes has made all those hot days in the kitchen worthwhile!
