I’ve been busy in the kitchen again, trying out a new flavour combination, and I’m really excited about this one – Ginger & Lime Baked Cheesecake.
I’ve always loved experimenting with different flavours and seeing how they work together, and this time I wanted to try something a little different. Ginger and lime might not be the first combination you think of for cheesecake, but I think they work beautifully together.
There’s something lovely about the contrast between the warm, gentle spice of ginger and the fresh, zesty flavour of lime. The ginger brings a little warmth and depth, while the lime adds freshness and a lovely citrus zing.
I’ve brought the two flavours together with my creamy baked cheesecake filling, using a ginger biscuit base, homemade lime curd swirled through the centre and chopped stem ginger on top.

So, let me tell you how my Ginger & Lime Baked Cheesecake came together...
I already love using citrus flavours in my cheesecakes, but I wanted to try something a little different with this one.
Ginger and lime bring two very different flavours together. Ginger has a lovely warmth and gentle spice, while lime brings a fresh, zesty sharpness.
I think that's what makes them such a lovely pairing.
The creamy baked cheesecake helps to balance the two, while the ginger biscuit base brings the ginger flavour through from the very first bite. The homemade lime curd adds a bright citrus note through the centre, and the chopped stem ginger on top gives little bursts of flavour and an extra bit of texture.
Ginger has always been an interesting ingredient to me, not just because of its distinctive flavour but also because of its long history of use.
It has been used in cooking and traditional remedies for centuries, and has also been the subject of research into a number of potential health benefits. Research has found the strongest evidence around ginger and certain types of nausea, particularly pregnancy-related nausea, although much of this research looks at ginger supplements rather than the amounts you would get from a food such as cheesecake.
Of course, I’m not making my cheesecake as a health food – it's definitely still a treat! – but I do love ingredients that have such an interesting history and can bring so much character to a recipe.
For this cheesecake, ginger felt like the perfect place to start. It gives the flavour a lovely warmth and depth, while leaving the lime to bring that fresh, zesty finish.
Every good cheesecake needs a good base, and for this flavour I knew I wanted to use ginger biscuits. The biscuit base gives the cheesecake its first hit of ginger and provides a lovely contrast to the creamy filling. I also like that the ginger flavour starts right at the base and carries through the cheesecake, rather than just appearing as a topping.
The other important part of this cheesecake is my homemade lime curd. I make it using the same method as my homemade lemon curd, but this time I use fresh limes. I start with the zest and juice of the limes, combining these with eggs and sugar before gently cooking the mixture on the hob until it thickens.
Once it's ready, I stir in cold butter to give the curd its lovely smooth and silky texture, before allowing it to cool. The result is a fresh, zesty lime curd with just the right amount of sharpness to cut through the creamy cheesecake.

Once my ginger biscuit base is ready, I add my plain cheesecake filling, filling the cheesecake partway before adding the homemade lime curd. I then swirl the lime curd through the filling, creating ribbons of lime running through the creamy cheesecake.
The remaining plain filling is added on top, followed by chopped stem ginger to finish. I love using the stem ginger here because it brings that lovely ginger flavour back through at the end, as well as adding little pieces of texture.
So, what have I ended up with?
A ginger biscuit base, creamy baked cheesecake, homemade lime curd swirled through the centre and chopped stem ginger on top.It's a combination of flavours and textures that I really love.
Warm ginger. Fresh lime. Creamy baked cheesecake. The ginger brings warmth and depth, the lime brings freshness and zing, and the creamy cheesecake brings everything together.
